The process of making the white wines takes place in 2 stages. Firstly the active phase with the malolactic fermentation, which can take between 3 to 10 months. This is followed by a further maturing phase, during which the wine stabilizes over 5 to 8 months. There is no fining or filtration before bottling

This is followed by light filtering, just before bottling.
