Savigny-Les-Beaune 1er Cru "Les Serpentières"

The village of Savigny-les-Beaune is located in the Côte de Beaune, a few kilometres North of the village of Beaune. The wine area of Savigny-les-Beaune is one of the oldest of Burgundy and a lot of parcels belonged to the Dukes of Burgundy and to the Abbeys of Citeaux and Maizières. "Les Serpentières" is located at the opposite of the Marconnets' plot Soil: Chalky with stones and gravels a bit of clay. Grapes variety: Pinot Noir - Guyot pruning with different seasonal processes in the vineyard (pruning, trellising on wires/tying-in, thinning fruit-bunches).

Grapes are harvested by hand and sorted out twice (when picking the grapes and on the sorting table), then destemmed (a third sort out can be done if necessary using our optical machine). Afterwards, grapes are put in stainless-steal tank for the alcoholic fermentation only with pumping over. After the alcoholic fermentation, a vertical pressing is done followed by a settling of the juice

The wine is put in French oak barrels of 228 liters (15% of new barrels). The malolactic fermentation takes place in barrels and the wine is aged 14 months, then bottled without fining or filtration following the moon calendar.

A wine plenty of fruit with well integrated structure. This full round wine is very long and charming.
